It's the same trick seamstresses have used for generations with their pinking shears, and it works at least as well on dough as on fabric, the difference being that nobody has ever been made happy by eating a piece of curtain.
This is a simple pasta wheel with a single fluted wheel, and it does one thing really well. Roll it over a sheet of pasta to get strips with wavy edges for pappardelle, or little squares that with two fingers and a bit of patience you pinch into farfalle. Separate ravioli and each little cushion gets that classic ruffled frame that makes them look as if they've come from a trattoria and not from a kitchen where someone was searching for the rolling pin for ten minutes. It does the same for pie crust, lattice tops and biscuits, where the edge makes even a hastily assembled pie look a little more considered.
The handle is made of light wood, light and pleasant to hold, with a small guard at the front that keeps your fingers on the right side of the wheel. The wheel weighs next to nothing and requires no technique, just a reasonably steady hand and even pressure.
The wheel comes from Marcato, the family business in Campodarsego near Padua that has been making pasta machines and kitchen tools since 1930 and is also behind the classic Atlas pasta machine.
