Straight or fluted edge? It's one of the great existential questions of the pasta kitchen. With this pasta wheel you don't have to decide in advance, or own two tools to change your mind, because it has one wheel of each kind: a smooth one and a fluted one.
The smooth wheel gives clean, straight cuts for tagliatelle, pappardelle and lasagne sheets, or for trimming the edges of a rolled dough so it looks as if you knew what you were doing from the start. The fluted wheel gives the classic wavy edge that makes ravioli, farfalle and small pasta squares a little more festive, and also helps press the dough together when you seal filled pasta. The same wheel works just as well for shortcrust, lattice pie tops and biscuit dough as for pasta.
The handle is made of light wood and sits lightly and comfortably in the hand, with a small guard that keeps your fingers away from the wheels. The wheels roll smoothly and easily through the dough without you having to saw back and forth, and that's really all you can ask of a pasta wheel.
The wheel comes from Marcato, the family business in Campodarsego near Padua that has been making pasta machines and kitchen tools since 1930 and is also behind the classic Atlas pasta machine.
