In Spain it is traditional to use a 'Pescado', a fishmonger's knife, to both cut and fillet the larger fish. Hence the special appearance. The blade is stainless steel and the handle is boxwood. Matches well with the fish scaler. Pallarès was founded in 1917 by brothers Lluis and Carles Pallarés Canal in Solsona in northern Spain. The Pallarès are renowned knife makers known for their sharp knives and cheerful disposition. The third generation, cousins David and Lluis, now manage their heritage with pride and passion. Pallarès is a craft from Catalonia and today has most types of knives and sharp tools in its range.
