The paring knife does the most small jobs in the kitchen and gets the least attention. It cores apples, peels shallots, digs the sprouts out of potatoes and slices garlic while the chef's knife takes a break.
This one comes from Zwilling's Pro series and is forged from a single piece of Zwilling's own stainless steel alloy, ice-hardened using the Friodur method so the edge lasts. The curved bolster, designed by Matteo Thun and Antonio Rodriguez, gives a steady grip close to the blade. That's where you want control when the knife is this small and the job this fiddly.
The blade is 10 cm with a plain edge and a hardness of 55–58 HRC. Classic black plastic handle with three rivets, overall length 21 cm. Hand wash. Made in Germany.
