A stainless steel oroshigane may not be as mythical as a sharkskin version, but it is all the more useful. It does its job with quiet precision and without asking for anything in return. It's a grater in its purest form, made to turn raw ingredients into flavor rather than show.
The small, razor-sharp teeth are punched directly out of the steel, producing a result that's finer and more even than standard Western graters. The ginger, daikon, garlic or apple will have a smooth, almost fluffy texture instead of the coarse flakes produced by ordinary perforated tools.
