    • If you've ever grated wasabi on a regular grater and thought ""this is mostly green puree with the consistency of freshly plastered walls"", then you've just experienced why sharkskin oroshigane exists. Because this is the tool Japanese chefs have used for centuries to turn fresh wasabi root into a smooth, fragrant paste with just the right amount of bite and blossoming aroma - not a torn trauma.

      The surface is made of dried sharkskin glued to a wooden board. It may sound strange, but the microscopic tooth structure of the sharkskin is perfect for atomizing wasabi without crushing the cells. The result is a creamy, almost whipped texture that releases the flavors gradually, rather than hitting the taste buds like a vicious mustard bomb.

      A sharkskin oroshigane is not a wear-and-tear item - it is used with reverence and maintained with as much care as a Japanese knife. Rinse it gently in cold water after use, let it air dry and store it as the sacred relic fragment it actually is. Avoid heat, detergent and the impulse to try grating garlic on it.
