The Nippon Japanese series is a series of knives with AUS8 stainless steel blades and magnolia wood handles.
The knife is of the sashimi type, which is a kind of classic Japanese fillet knife, primarily intended for preparing fish. The blade is single-ground in the traditional Japanese way and has a blade measuring 20.5 cm.
The sashimi knife is the one shown at the top of the picture.
