The Warikome series is named after the forging technique of lining a steel knife with a layer of softer steel on each side. This protects the core steel and allows it to stay sharper for longer while being easy to sharpen. The core steel is AUS10 with an HRC of 58-60. Handle in pakka wood. Nakiri is a traditional vegetable knife, perfect for chopping and shredding.
