The nakiri is the Japanese vegetable knife. The straight, rectangular blade runs parallel to the cutting board along its entire edge, giving a clean, straight cutting motion without the rocking a European chef's knife needs. The technique is different, and for anyone who cooks a lot of vegetables, it's a natural choice.
The SG2 powder steel core is ice-hardened with the CRYODUR process to 63 HRC and hand-finished using the three-step Honbazuke technique to an angle of 9.5 to 12 degrees per side. 101 layers of floral-pattern Damascus steel surround the core.
