This tray has two jobs. It makes mini financiers, the brown butter almond cakes nobody can stop at one of, and it makes Biscuits roses de Reims, the pink biscuits that people in Champagne dunk in a glass of bubbly. Both need small, elongated moulds with straight sides, and that is exactly what you get.
The coating is a two-layer, PFAS-free non-stick that Gobel describes as one of the thickest around, so the cakes release without butter. The tray measures 290 x 198 mm and handles 250°C. Made in France by Gobel, who have been making bakeware since 1887.
