Salt from the Kalahari Desert in southern Africa, extracted from an underground salt deposit formed 280 million years ago when an inland sea, Makgadikgadi, slowly evaporated. Far from industrial pollution and outside contaminants, the salt has retained a remarkable whiteness and a natural richness of minerals and trace elements such as calcium, magnesium and potassium. Unlike refined table salt, Kalahari salt has undergone minimal processing, meaning the minerals stay put and contribute to a more complex and rounded flavour alongside the saltiness.
