  • Information
    • Portioning scoop from Stöckel which in theory is an ice cream scoop, but in practice is a volume tool. It is manufactured in solid stainless steel and dimensioned to work consistently, not only in frozen desserts but in any situation where a round, exact and repeatable shape matters. The quality and mechanics would make anyone blush, even someone who has never shown the slightest interest in engineering. It is immediately obvious how exceptionally well built these scoops are. Anyone who picks it up will feel an instant urge to own it. Not necessarily to use it, but because it operates on such a remarkably high level.

Model CR has a distinct, slightly deeper bowl than many lighter alternatives. This allows it to move cleanly through both firm and softer masses without deforming the shape. The rigid construction delivers even pressure throughout the motion, which is particularly noticeable when working with dense ice cream, cold forcemeat or compact purée. The difference between a Stöckel portioning scoop and others is evident from the very first scoop, and even more so at the ten-thousandth with the same tool.

This is a tool that works just as naturally in meze production as in pastry kitchens. A rounded portion of hummus or baba ganoush gains clear definition on the plate. Mashed potatoes on a service line become identical from first to last portion. In fine dining contexts, the bowl can be used to create exact elements of mousse, pâté, fresh cheese or vegetable purées where form and volume must remain consistent. It is equally relevant in bakeries and confectionery work, for fillings, creams or doughs where standardised quantity saves time and ensures more even results.

The sizes in the CR series cover a wide range, making the tool applicable in different contexts. Choose the one that best suits your purpose:

      Size 1/12
1/12 means one twelfth of a litre and therefore indicates how many scoops you obtain from a litre. In this case it corresponds to 83 ml per scoop. Suitable for generous servings where the component should be clearly present and structurally important on the plate, such as larger portions of mash or rustic spreads.

      Size 1/16
1/16 delivers 63 ml. A strong all-round size, generous without being excessive, suitable for ice cream but equally useful elsewhere.

      Size 1/20
1/20 is often considered industry standard for an ice cream scoop. 50 ml provides balanced volume and works well for spreads and other components.

      Size 1/24
1/24 also sits within the standard range but produces a slightly more refined scoop. The volume is 42 ml and is suitable for complementary elements on both cold and warm plates.

      Size 1/30
1/30 delivers 33 ml. Well suited for accompaniments or plate components intended to complement while remaining distinct.

      Size 1/36
1/36 is intended for smaller elements, tasting portions or precise plating where detail takes precedence over volume, which in this case is 29 ml.

Stöckel’s strength lies in material selection and manufacturing consistency. The bowl is not thin pressed metal but has a noticeable rigidity that ensures it retains its form even after long-term use. The spring mechanism and gearing are well above industry standard and the smooth surface is hygienic and easy to clean. Naturally, it withstands daily dishwashing without degradation.

Model CR is therefore not merely an ice cream scoop but a tool for standardised form and portion control. It provides control over volume, improves calculability in the kitchen and creates visual consistency in service. It is precisely the kind of utensil that over time becomes an unquestioned part of mise en place, whether for dessert, meze or hot dishes.
