Seki in Gifu Prefecture is not simply a city of knives. It is one of the world’s three major centres of blade production, and the precision cultivated in the region over generations extends far beyond chef’s knives. Suncraft manufactures this mandoline in its own factory in Seki, and the blade is sharpened by hand by craftspeople with the same background as those who produce kitchen knives for professional kitchens.
The blade is made from molybdenum vanadium steel, the same type of steel used in professional kitchen knives. It is set at a 47-degree angle to the direction of slicing, which noticeably reduces resistance compared with a straight-mounted blade. Thickness is adjusted with a dial across 15 settings from 0.4 to 6 mm, in increments of 0.4 mm. That gives you precision for thin potato gratin, thinner slices for ceviche and thicker cuts for vegetable garnishes.
The set includes two julienne inserts: 2 mm for carrot and radish in salads, and 6 mm for preparing chips. They lock securely into the body and remain stable during use. The leg folds out to give the mandoline a cutting angle that requires minimal force. Three rubber contact points keep it in place. A safety holder is included and should be used.
