Madeleines must have a hump. It is not up for negotiation: the shell shape and the hump are what separate a madeleine from an ordinary sponge cake with ambitions. This tray has twelve classic-size cavities: one batch for afternoon coffee and another for whoever turned up late.
The tray is from Gobel's Obsidian range with a non-stick coating, so the fluted shells release cleanly and keep their pattern. It measures 395 x 200 x 17 mm. Gobel is a French maker of moulds for pastry chefs, and for anyone who has read Proust and thought dunking cake in tea sounds perfectly reasonable.
