    • A longer model of rice spoon, or shamoji, designed for larger vessels and for working comfortably with hot quantities of rice without having to lean over steam or heat. The shape is the same as the classic short version but the length of the handle gives better control when mixing, especially when working in a hangiri (wooden bowl) or high-sided rice cooker.
      Made from bamboo which is light, strong and naturally resistant to moisture. The surface has a fine texture that helps to separate the rice grains without them sticking. The flat spoon allows the rice to be gently turned to retain its shape and shine, which is essential when mixing sushi rice with vinegar.
      A long shamoji is also used when serving from larger vessels, such as in a restaurant setting or cooking classes where several portions are handled at once. It works equally well with steamed rice, chirashi sushi or takikomi gohan, where you want to lift the rice rather than stir it.
      Hand wash and dry standing up so that the bamboo holds its shape and does not crack. A well-used shamoji only gets better with time and has a slightly silky surface that makes the work even smoother.
