In Calabria, liquorice has been grown for a very long time and the region has become famous for its high quality liquorice roots. Here in the form of a powder with very good flavour. The powder can be used as it is or mixed into sugar syrup, added to food and baked goods, or whatever the mood takes you.
An internal favourite is liquorice carrots. Cut carrots into just the right size pieces, vacuum packed in a bag full of liquorice powder and cook sous vide until ready. A flavour sensation that goes unexpectedly well with most things, but perhaps best with Mediterranean food or meze.
