The oyakodon pan lid, or donburi futa, is a lightweight and functional lid used when cooking classic Japanese rice dishes such as oyakodon, katsudon and tamago don. The purpose is not only to keep the heat, but to create an even, moist heat in the pan so that the eggs and broth set gently without drying out. The result is the characteristic silky texture that distinguishes a well-made donburi from a hastily cooked version.
This lid is made of aluminum with a black plastic handle, making it lightweight, heat-resistant and easy to handle even over an open gas flame. The curved shape allows steam to circulate, and the tight rim allows the liquid to condense and moisturize the ingredients as they cook. This particular type of lid is often used directly on individual portion pans, where each serving has its own cooking and heat distribution.
In addition to oyakodon, the lid works equally well for other donburi-style quick dishes, such as gyudon or ten don. It can also be used to reheat rice, steam vegetables or keep yaki or tamago pans warm without burning the contents.
