Shinmatsu is the series for anyone who thinks regular premium knives are just… downright terrible. Here we are talking stats that would completely break game balance. Three layers of steel with a core of ZDP189 powder steel reaching HRC 65 to 66. This is the knife equivalent of Clint Eastwood in his prime: rock hard, versatile without being flashy and durable enough to star in and direct two hundred brilliant films a year while fathering about fifty kids on the side*. The steel core is so hard it keeps its edge longer than a fully focused Mr Miyagi. If you are the type who prefers sharpening your knives only once every five years, then Shinmatsu is your soulmate in blade form.
The knives in the series feature a deep black Kurouchi finish that not only looks fantastic but also protects the blade and gives it an attitude that says “I am tough”. The handles are made from dark pakkawood, an extremely moisture resistant composite of wood fibres and epoxy. They are so stable they could probably survive a tropical monsoon or a seriously sweaty Friday night pasta session.
Included in the set
Bunka 20 cm
The large and majestic all rounder that handles almost anything. Perfect for meat, fish, vegetables and everything in between (meaning mushrooms). The shape offers a straight cutting edge for maximum control and precision, while the tip is excellent for detailed work. This is the knife you bring out when you want to feel total dominance over the cutting board.
Bunka 13.5 cm
The little brother of the 20 cm, but absolutely not to be underestimated. Perfect for onions, garlic, herbs, small vegetables and all the day to day tasks where you want the same feeling as the big one but in a more compact package. A knife so enjoyable to use that you will reach for it even when you do not need it, simply because it is fun.
