A classic Japanese omelette pan, specially designed for frying tamagoyaki - the rolled omelette that is a staple of bento boxes and sushi bars alike. The shape is rectangular to facilitate the folding of the egg layer into a perfectly even roll.
This model is made of enameled sheet steel, which provides fast and even heat distribution and natural protection against rust. The enamel makes the surface easy to clean and reduces the risk of eggs sticking, while withstanding high temperatures better than Teflon.
The beech wood handle provides a secure grip and stays cool during use. The pan works on most heat sources, including gas and electricity, but not induction.
For best results, a lightly oiled surface and several thin layers of egg batter rolled in stages are used. It's the same technique used in classic atsuyaki tamago (thick omelette) and dashimaki tamago (flavored with broth).
