Lighting the Binchotan is a bit like trying to wake something that doesn't want to wake up.
The Japanese white oak has a density and structure that allows it to burn cleanly and for a long time, but precisely because of this it also resists flames and rapid combustion. That's why there's the charcoal lighter - a thick cast iron vessel that converts open flame into an even, enveloping heat.
This model is made in Japan, and is used in the same way in yakitori and robata kitchens as in smaller home barbecues. The charcoal pieces are placed in the vessel and heated slowly, often over a gas burner or open flame, until they begin to glow from the inside rather than burn on the outside.
The cast iron stores the heat and reflects it back to the charcoal, creating natural convection in the closed mold. The result is an even, clean burn with no smoke, no gas smell and no pungent odor that occurs when coals are lit too quickly.
It's not about speed, it's about control. Once the Binchota glows, it lasts for hours, and this process, from the first flame to a steady glow, is part of the craft. In many Japanese restaurant kitchens, the charcoal lighter is as essential as the grill, ensuring that the coals always start under the same conditions, regardless of the environment or weather.
The wooden handle allows the vessel to be moved even when hot, and the high, straight wall profile keeps the embers together while naturally controlling the air supply through the opening.
The vessel also works well for other types of charcoal - such as coconut, charcoal or briquettes - where you want a stable glow without overheating. The cast iron is durable, heavy and completely unaffected by high temperatures, making it equally suitable for professional use as for careful home cooks.
After use, the charcoal lighter should be allowed to cool naturally. The cast iron should not be cooled with water, as it risks cracking with rapid temperature change. Once cooled, wipe it with a dry cloth, and over time it will acquire a slight patina from heat and use - a finish that will only improve with use.
It is a tool of patience and precision. It does nothing fast, nothing spectacular, but it does the most important thing: lights the coals the right way, every time.
