A classic Japanese brush, uchiwa bashi, for cooking, made with hand-tied goat bristles and an untreated wood handle. It is traditionally used to brush tare (sauce) onto grilled skewers such as yakitori or kushiyaki, but works equally well for glazing, oiling cast iron or baking.
The goat bristles are soft but dense, allowing the brush to distribute liquid evenly without leaving streaks. It absorbs just the right amount of sauce for each stroke, giving a controlled, fine result that professional Japanese chefs appreciate.
The simple design with no metal ferrule makes it easy to clean and reduces the risk of bristles coming loose. When used with the right care, it will only get better over time, just like a well-crafted kitchen tool should.
