Stöckel’s Ice Cream Dipper Model B is the technical evolution of the classic. It has the same solid construction, the same heat-conducting fluid in the handle, the same uncompromising German engineering, but it is also ceramic-coated to provide improved non-stick properties and make the work even smoother.
Like its counterpart, this dipper is made primarily from aluminium. There is no plastic core, no loose parts and no compromises on quality. The scoop has a body with the correct radius and a balance that sits exactly where it should. The difference compared to Model A becomes noticeable when the ball releases more cleanly, particularly during busy service or when working with ice cream that tends to cling.
The ceramic surface reduces friction between the ice cream and the metal. This results in a cleaner release, less resistance through the motion and a quicker return to the next portion. In practice, this means less twisting strain on the wrist and less need to knock the ice cream free. At high working speed, that makes a real difference. It is also dishwasher safe without developing the dull, oxidised look that untreated aluminium tends to acquire.
Model B is designed for professional use, just like Model A. It is rigid enough to work through hard ice cream without flexing and sufficiently well balanced to deliver consistent pressure throughout the entire movement.
At the same time, while the ceramic surface makes the work easier and simplifies cleaning, it does require a degree of respect in handling. Ceramic is more delicate than aluminium and more prone to scratching or cracking. This is not something that should cause undue concern in daily use, but as always, common sense and respect for well-made tools apply. And as usual with Stöckel, this is absolute top class.
