The Finnish pan from Heirol is made of coated carbon steel with a non-stick surface and a removable base that lets the cake go without protest. It's just as good for tall sponge cakes as for cheesecakes, mousse cakes and bakes that never see the inside of an oven. Grease and dust the pan with breadcrumbs or flour before baking, and if the batter is runny, line the base with baking paper for an even better seal. Wash by hand.
