    • In a Japanese sushi kitchen, everything begins with the rice. Not the fish, not the knife. The rice. And the critical moment, when the freshly cooked rice is mixed with sushi vinegar while being fanned cool at the same time, calls for a specific tool: the hangiri, the wide, shallow tub that has long had its place in Japanese kitchens. Its shape is no accident. The shallow profile gives maximum room for turning and fanning without crushing the rice, while the surface absorbs the last traces of moisture that make the difference between rice that sticks together and rice that falls apart.

      Hasegawa has taken the traditional tool and redesigned it from the ground up. Where the classic hangiri is made from hinoki cypress with bamboo or copper hoops around the outside, the FHG series is made from an advanced foamed synthetic material: light enough to lift with one hand, but without the problems associated with wood. No black mould requiring soaking and special care. No wood splinters in the rice. No hoops coming loose. Dishwasher-safe and resistant to cleaning agents. And a non-stick surface that releases the rice cleanly and makes cleaning quick.

      Hasegawa has manufactured professional kitchen and food-service equipment in Japan since 1992, with certifications covering EU food-contact material requirements and Japanese food standards. The FHG series is approved for professional use and is used in sushi restaurants around the world.

      Choose the size according to volume: the 48 cm version holds up to 1 sho of uncooked rice, approximately 10 Japanese rice measures of 180 ml each, and is suitable for home use, smaller sushi restaurants and small-scale catering. The 60 cm version handles 1 to 2 sho, or 10 to 20 rice measures, and is the right choice for busy restaurant kitchens and catering operations with continuous production. The 72 cm version is intended for more than 2 sho and is suited to high-volume professional kitchens where rice is prepared in batches throughout service.
