Gyuto with a 24 cm blade from Mcusta/Zanmai's Supreme Twisted series, one of the more ambitious knife lines from Seki in Japan. The core steel is Aogami Super, one of the hardest and most highly regarded carbon steels for kitchen knives, hardened to 64 HRC. This provides an exceptionally sharp and long-lasting edge that holds its sharpness for a long time. The construction is San Mai: a carbon steel core clad on each side with stainless steel, combining the performance properties of carbon steel with a degree of corrosion protection.
The handle is in hinoki, Japanese cypress, shaped as a twisted octagon that provides a natural and stable grip. Collar in brushed nickel silver and a decorative mosaic pin.
Carbon steel requires care: hand wash immediately after use and dry before storing. Not dishwasher safe. With proper care, the blade develops a patina that further protects the steel.
