The gyuto is the Japanese interpretation of the chef's knife. Where the European form is broad at the heel and allows for a rocking motion, the gyuto is thinner, lighter and designed for a cutting motion that draws back through the ingredient rather than rocks over it. Anyone used to a European chef's knife notices the difference immediately. Then they notice that it cuts better.
The Senzo Retro Gyuto 200 mm is made by Suncraft in Seki, Japan, a family company rooted in the city's knife-making tradition since 1948. The blade has a San Mai construction with Ginsan as the core steel: a semi-stainless steel that can take a finer bevel than most European alternatives and stay sharper for longer without being as sensitive as pure carbon steel. Hardness: 59-61 HRC. The nashiji surface is the classic pear-skin texture that reduces friction and gives the blade a distinctive matte appearance. The handle is made from wenge, one of the hardest woods in the world, with an octagonal shape.
