The black stained-maple handle against the floral Damascus pattern of 133 layers of steel is no accident. Miyabi Black is a series with a clear aesthetic identity, built around MC66 powder steel ice-hardened with the CRYODUR process to 66 HRC and hand-finished using the three-step Honbazuke technique.
The handle has a traditional Japanese D-shaped cross-section with a rounded spine and heel, for a comfortable full grip. Mosaic pin and bolster in stainless steel. Gyuto, 20 cm. Requires a whetstone for maintenance. Hand wash. Made in Seki, Japan.
