A surface thermometer for the grill or cooking surface, made of stainless steel and NSF certified. It is placed directly on the grill grate or cooking plate and measures the actual contact temperature of the surface, unlike thermometers mounted in the lid that measure the air temperature inside the grill dome. The difference is practical: air temperature and surface temperature can differ by tens of degrees depending on grill type, fuel and weather, and it is the surface temperature that governs how quickly the Maillard reaction starts and how the food behaves against the grate.
The dial is divided into two clearly marked zones. The lower zone covers the temperature range for general cooking of most proteins. The upper zone indicates the temperatures at which the surface is hot enough to form a quick, caramelised crust without the cooking inside the food continuing at the same rate. The scale shows both Celsius and Fahrenheit and can be read without lifting the thermometer from the surface.
The thermometer can remain on the grill grate throughout the cooking. Handles on the sides make it possible to move it with a fork or tongs even when it is hot. NSF certification means the manufacturing process is regularly audited against food hygiene requirements. Temperature range: 40 to 260°C. Diameter: 5.7 cm.
