Glucose powder is incredibly versatile. It works as a sweetener and improves the flavour, texture and stability of many foods, while also extending the shelf life of baked goods. It has a moderate sweetness (70% of the sweetness of sugar) and can be used in a wide range of baked goods, including cakes, desserts, confectionery and jam. Used in jams and fruit preparations, it will enhance the flavour of the fruit and improve its stability. Add it to ice cream to prevent ice crystal formation (it has a lower freezing point than sugar) and to ensure a glossy, smooth texture. The same goes for glazes. It can be added to drinks to sweeten and improve the flavour and is commonly used in energy drinks. It blends easily with a wide range of food ingredients and can be diluted by mixing with water. If you are substituting glucose syrup with glucose powder, use 75g of glucose powder instead of 100g of glucose syrup. Our glucose powder has a DE value of 40.
Usage: Dose as needed to achieve the desired flavour. If using in combination with sugar, add the liquid at the same time as you add the sugar according to your recipe.
Ingredients: Dried glucose syrup in powder form
Storage: Store in a dry, cool place away from direct sunlight. Use within 6 months of opening.
