A removable handle prevents you from burning your hand when you use the pan to finish cooking in the oven. You also avoid collisions between the handles if you have a tight space on the hob. You can buy the handle separately in different colors (art. no. 8359.00 and others). 20 cm has a bottom diameter of 14 cm. 28 cm has a bottom diameter of 20 cm.
nMineral B are uncoated pans in pure carbon steel that only work better and look better over the years. The lack of non-stick coating allows frying at really high temperatures and of course the pan is also oven safe. Works on all heat sources including induction. The series is called Mineral B and comes with a protective coating of beeswax. A deeper explanation and video on how to do it can be found here. OBS! Since carbon steel pans are made of a layer of hot-rolled carbon steel, they can easily warp if used on a heat source that is smaller than the flat surface of the pan and become concave or convex .
