About Fructose
Fructose is a simple sugar that occurs naturally in foods such as fruits and vegetables. It is what gives fruits their sweet taste. It is about 1.2 times sweeter than regular granulated sugar and has only 50% of the calories. Fructose offers unique benefits such as improved texture, a different consistency in ice cream and different taste, stability and feel in other dishes. Fructose is widely used in low-calorie products, flavored sparkling water, etc.
Use
If you want to replace regular sugar with fructose, use 2/3rds as much as the recipe says. If you don't want to ferment, bake at a slightly lower temperature.
