The final detail is often the one that shows most. A ravioli with a straight edge is good. A ravioli with a fluted edge looks as if it comes from a kitchen where someone cared about every step along the way. That's the difference this pasta wheel makes, and it does it with a calm precision that makes the cutting itself feel like part of the meal.
The wheel is made of brass, with fine, even teeth that roll through the pasta dough and leave a fluted edge behind. The brass has a warm, golden sheen reminiscent of old kitchen tools and instruments, and over time it develops a soft patina that tells of every sheet of pasta it has cut. The handle is solid canaletto walnut, the dark walnut with almost black veins, and sits steady and warm in the hand. Wheel and handle are assembled by hand so the wheel runs smoothly and easily and follows the slightest movement of the wrist.
Use it to separate ravioli and agnolotti, cut pappardelle and farfalle with fluted edges, or give a shortcrust pie a lattice that makes your guests think you've been to evening classes. When it's not in use, it stays out on the worktop, because it's far too beautiful to hide in a drawer.
The pasta wheel is part of Marcato's Heritage range, where dark walnut and brass meet in kitchen tools inspired by the 20th-century Italian kitchen. Marcato has been making kitchen tools in Campodarsego near Padua since 1930.
