Dumplings are not difficult to make, but they are difficult to make identical. It takes time to learn to fold a dumpling that looks like the other nineteen, and in a professional kitchen time is a scarce resource.
This tool stamps out five at a time with identical shape and an 8 mm wide rim. The body is brushed stainless steel, the hinges likewise, and the handle runs the full length of the mould so that pressure is distributed evenly across all five moulds simultaneously. The internal coating is Teflon.
Important to know: the mould should not be closed without dough inside. That sounds like a strange warning but the Teflon coating is damaged if the two halves are pressed together without anything between them. Wash by hand with mild detergents and a soft sponge; dishwasher is not suitable.
