The Dual is a two-stage electric diamond knife sharpener from SharpX to quickly and easily recover the debris in your knives. The first grind is coarser to remove imperfections and sharpen the steel - the second grind is finer to sharpen and polish the steel. The technology of the knife sharpener is optimized to achieve a convex angle on the steel, which gives a stronger and more durable edge.
One recommendation is to use new knives when sharpening with diamond wheels. Knives sharpened on other systems are often at different angles, which can mean that it takes a few times before the edge is at the right angle. However, when the knife is sharpened in SharpX it is dead easy to get a sharp edge.
Make sure the knife is clean and wet before you start using it. Do not try to hold the knife at an angle but let the sharpener guide the knife. It is easiest to hold the knife in one hand and control the edge with the other. Grind until you have a raw edge. The easiest way to check this is to gently pull the edge towards you at a 30 degree angle on a plastic card. If the card vibrates, you have a rough edge. Once you have a rough edge, you can move on to the next cut. Test the end result there by pulling the knife towards the same card - it should now just slide across.
