Cream cartridges from iSi Cream cartridges (cream chargers) from iSi that contain 8.4 grams of N2O, which is 20% more than the standard cartridges. The cartridges come in packs of 10 or 50. Recipes from iSi can be found here. Cream cartridges are used for everything from cream and mousse, to purees and foams. Fits iSi's various siphons, for example Gourmet Whip (but not soda or nitro siphons). iSi is the only manufacturer that has had its cartridges approved according to HACCP (Hazard Analysis and Critical Control Point), quite reasonable we think at KitchenLab, since they are intended for consumption. Other manufacturers regard their gas cartridges as kitchen equipment, which lowers the requirements for cleanliness even though the contents must be consumed. To reduce the risk of confusion, iSi's cream cartridges are purple, while the soda cartridges are gold and the nitro cartridges are brown and wider. ATTENTION! We reserve the right to cancel orders where we suspect that the cartridges will be used for purposes other than cooking. We do not sell cream cartridges to people under the age of 20.
