Clef du Vin is a wine tool with one very specific party trick: every second it spends in contact with the wine equals one year of ageing. The principle is backed by ten years of research and is patented. It is made from a special alloy that catalyses the same chemical reactions that normally happen as wine matures in the cellar, but in a fraction of the time.
Pour a glass, taste it and note your impression. Dip the disc for a few seconds and taste again. If the wine opens up, softens or genuinely improves, it has ageing potential and is worth waiting for. If on the other hand it loses its structure or fruit after just one second, the wine has already peaked and should be drunk right now. The process can be repeated second by second until the wine's qualities start to fade, giving you a concrete picture of how long the bottle will hold.
It also works in reverse: a wine that feels too young and tight can be dipped for a few seconds to become more accessible and enjoyable straight away, without waiting years in the cellar.
