The Pepper Quest sources Quảng Nam cinnamon at 1,500 metres altitude in the interior of central Vietnam, near the border with Laos. The tree, Cinnamomum Loureiroi, locally known as Tra My Cinnamon, is native to the Truong Son forest and has long been regarded as sacred by the ethnic groups who live there. It takes ten years for the bark to mature to the right quality. The harvest: a cut at the base of the tree, the bark dries for a couple of weeks on site to capture the essential oils, then it is collected. Most Quảng Nam cinnamon never leaves Vietnam. What is exported goes largely to China.
Whole sticks are ideal for anything that needs to cook for a long time: pho broths, meat dishes, spiced stews and tomato sauces. The sticks release flavour gradually and can be removed when they have given enough. Grate towards the end if you want a touch of cinnamon in baking or a warm drink. Also available as ready-ground powder for those who bake regularly.
