Coq au vin, boeuf bourguignon, chicken with forty cloves of garlic. Everyday French cooking is largely built on dishes that are browned, deglazed and left to simmer under a lid for a good long while. That's exactly what this braiser is made for.
The low, wide shape gives you plenty of base to brown on, and the sides are high enough for both sauce and stew. Inside the lid is Staub's Chistera structure, a raised pattern that catches the steam as it condenses and lets it drip back over the food. The dish bastes itself as it cooks, and the flavour stays in the pan.
The braiser is cast in France with a matt black enamel interior and a cherry-red exterior, one of Staub's classic colours. Both handles get hot, so keep oven gloves close at hand.
Available in two sizes: 24 cm holding 2.4 litres and 28 cm holding 3.7 litres. Works on all hobs including induction, in the oven up to 260 °C, and is dishwasher safe.
