The shape is low and wide, so there's room to brown chicken thighs or vegetables properly before you add the liquid and put the lid on. Inside the lid is Staub's Chistera structure, a raised pattern that collects the steam and lets it drip back down into the food. That keeps the dish juicy without you having to lift the lid and baste.
The braiser is cast in France with a matt black enamel interior. The exterior is graphite grey, a muted shade that suits most kitchens. Both handles get hot, so keep oven gloves handy. Capacity 2.4 litres. Works on all hobs including induction, in the oven up to 260 °C, and is dishwasher safe.
