Scraper in stainless steel with black polystyrene handle, developed specifically for chocolate work. The blade length is 270 mm, calculated for the sweeping movements required when tempering on a marble slab, coating pastry surfaces and scraping off excess. The length provides sufficient coverage per stroke to minimise the number of passes and achieve a more even layer.
The blade is extra rigidly designed to hold its shape under the pressure of scraping, without the flex that makes lighter spatulas imprecise when working against a hard surface. The handle is firm and gives a direct grip without give, making pressure controllable and consistent. Works perfectly well for scraping flour off the bench too, of course.
