Staub's braiser is wide and low, made for browning and then letting the dish simmer to the finish under the lid. It's the lid that makes it special. Inside is Staub's Chistera structure, a raised pattern where the steam condenses and drips back over the food, so the dish is constantly basted in its own juices.
