Home-grown chili, sand-grown garlic and Vietnamese sea salt, lightly fermented and sun-dried. That is all. The Pham family, who grow Phu Quoc's well-known black pepper on the island in southern Vietnam, also make this chili salt from ingredients grown on their own farm. The process resembles a light pickling more than a regular drying, and that shows in the end result.
It does not taste like a regular chili salt. Heat is present, but it is warm and rounded rather than sharp, and behind it sits umami, a light fruitiness and something deep and roasted. It is a salt to cook with and pour over finished food.
Sprinkle over roe, sashimi or a fried egg in butter. Rub into chicken wings or ribs before the grill. Stir into mayonnaise. Dip bread in olive oil with a little chili salt on top. The Pepper Quest also makes a pepper salt with black pepper and garlic from the same farm, for those who want that concept without the chili heat.
