The Chef's Knife Classic 1891 (S) is defined by its spindle-shaped handle in red-stained Swedish birch, inspired by the very first Mora knife crafted over a century ago. The handle geometry has been steadily refined over the years to deliver maximum control and comfort during long stints at the stove.
The elegant, ergonomic handle in Swedish birch is protected by stainless steel ferrules at both ends, preventing bacteria and moisture from sneaking into the wood. With Swedish-made bolsters of precision-cast stainless steel, the knives take on a rugged look while creating a comfortable weight and balance in the hand. Embossed on the rear bolster, the coat of arms of Dalarna gleams as a historical guarantee of quality and craftsmanship.
The 22 cm polished blade is made from Swedish stainless steel, 10C28Mo2, with a recycling rate above 80%. This high-quality knife steel enables razor-sharp edges and has a chemical composition that makes it resistant to corrosion and easy to resharpen.
The blade undergoes a rigorous manufacturing process refined over 130 years at the knife factory in Mora. Here we pursue an ideal balance between optimal sharpness and edge retention. The blade blank is heat-treated by first being raised to over a thousand degrees in a protective atmosphere, then cooled to room temperature and subsequently deep-frozen to more than -80°C. Finally, the blade is tempered at several hundred degrees to maximise the steel's performance. After this heat treatment, the blade reaches a hardness of 57 HRC.
The blade is flat-ground under meticulous control, followed by precision grinding of the edge, resulting in a total edge angle of 36 degrees - 18 degrees per side.
Every component is carefully developed and crafted with masterful quality, and the knives are hand-hafted by skilled artisans at our knife factory in Mora.
