CentriCook XL is a non-cooled centrifuge that reaches 4000 RPM in less than 15 seconds. It clarifies all types of juices, broths or vegetative water without having to use pectinases or thickeners or increase the temperature.
Designed for very precise work in cooking and cocktail making. CentriCook separates the juices from the suspended fibers and concentrates them in the bottom of the bottle as concentrated pulp. In the upper part, the clarified juice remains, very useful in cocktails to obtain clear drinks without liquid particles, but also offers the possibility of absolutely incredible consommés and other fun.
CentriCook contains 4 containers of 800 ml and clarifies 3.2 liters in about 15 minutes.
Its main advantage over the use of pectinases or thickeners is that the process is much faster, it is not necessary to heat the product, it does not accentuate the acidity and does not expose the liquid to oxidation. The final product obtained has a more natural taste.
The CentriCook is mechanized, speed and working time can be easily controlled by the front display. Equipped with a safety system that prevents the machine from opening during the spinning process. Extremely quiet and stable.

Clarification with enzyme:
Pectinex is an enzyme that breaks down the pectin chains in some fruits and vegetables, softening them and giving them a cooked texture, but without cooking. It can help clarify some products on its own, although the effect increases when combined with the power of a centrifuge. When comparing an extremely clarified product with a less transparent one, the taste result is generally in favor of the less treated one. More filtered (clarified) product = more crystalline and less intense flavor. The use of a centrifuge like the CentriCook speeds up the process significantly, allowing 1 liter to be clarified in 10 minutes. Pectinex accelerates the pectin degradation process which significantly increases efficiency and reduces working time. It also produces a more concentrated, silky and pleasant residue. This residue which becomes like a paste of concentrated fruit becomes a very inspiring ingredient in the kitchen. At the top is the clarified juice, which is very useful in cocktails, consommés, sauces or other fancy concoctions.
