Canelés are Bordeaux's way of proving that a pastry can be crunchy, deeply caramelised and still as soft as custard inside. That takes the right mould, and this one has the classic fluted profile that gives the crust something to caramelise against.
The mould is made of aluminium for even heat, with a four-layer non-stick coating so your canelés release without greasing. It handles 250°C and measures 55 x 50 mm, the classic size. Gobel has been making bakeware in France since 1887, and these are still made there. This box holds six moulds, which is roughly the number of canelés anyone has ever managed to stop at.
