Copper canelé molds from de Buyer. You can, of course, make canelés in stainless steel or silicone molds, but the best results are achieved with the copper original. The copper spreads the heat better and creates a better "crust" on the canelé. Can also be used for slightly different cupcakes. The inside of the mold is tin-plated. Three sizes: 35 mm, 45 mm, 55 mm in diameter. Price per piece. Curiosity: There are two parallel spellings of this little pastry, "canelé" and "cannelé". The word comes from the Old French "cannelures" (first record is from 1342) which later became "canal" (channel) and in its diminutive form - cannelle means "small channel" or "something small tubular". "Canelé" thus functions more as a trademark, there being no doubt that it refers to the pastry, and not to anything else small and tubular. While cannelé is the original. So which version is right? Unfortunately, the answer is not entirely clear. Both are valid parallel forms, but cannelé is much more commonly used. The purist would point to the linguistic precision and rigour of Canelé. But honestly, we just want something tasty with our coffee, don't we? n
