Butcher paper is a must for all ambitious grillers. Wrap ribs, briskets, prime rib or chicken to protect your protein from drying out during cooking or while resting after being removed from the grill/oven. Unlike foil, the porous paper allows air to circulate through, preserving the "bark" of the meat. Another advantage compared to foil is that the butcher's paper does not concentrate the heat and therefore does not risk the meat being overcooked.
