A perfectly shaped burger looks simpler than it is to achieve consistently. The thickness varies a little in the middle, the diameter does not quite match the bun, and the next plate looks the same as the previous one, but not quite. That is enough for it to show and enough for the cooking time to go wrong. This burger press from Hendi fixes the patty in the only way that actually works in a busy kitchen: mechanically, consistently and without requiring the chef's hands to remember the size from last time.
The housing and stamp are both anodised aluminium. The press is pushed down with a handle and then lifts the patty automatically. It therefore does not stick, and no scraper is needed. On the side sits a lever to release the meat from the mould if it does stick, but in practice that is a rare problem. Includes paper discs for stacking patties without them sticking together. More are available to buy.
This model forms patties of ø130 mm.
