Shinmatsu is a series with insane stats. Made from three layers of steel with a core of ZDP189 powder steel that has HRC 65-66! If these were pokémon cards, they would be like glittery Charizard to give you an easy comparison. With its extremely hard steel, it stays sharper than a Buddhist monk with blinders and will also stay sharp for a long time. If you only want to sharpen your knife every five years, you should choose the shinmatsu. The handle is made of pakka wood which is a composite of wood shavings and epoxy and is extremely resistant to moisture. The stylish black kuroshifinish makes the knife stand out in appearance as well. Bunka 20cm is a wonderful all-round knife for most things in the kitchen.
