Brioche à tête is the French brioche with a head: a fluted base with a little ball on top, and it is the fluted mould that gives it its silhouette. Without the right mould it is just a sweet bun, and we are too fancy for that.
The mould has ten flutes and measures 80 mm across, a classic size for an individual brioche. The material is 0.5 mm thick. The coating is a two-layer, PFAS-free non-stick that Gobel describes as one of the thickest around, so the dough releases without greasing. The mould handles 250°C and is made in France by Gobel, who have been making bakeware since 1887. It also works for small cakes and desserts that want to look a bit more French.
